After last year’s forest fires, the morels are coming up in force. Inspired by my recent visit to Italy as part of my Travel, Food and Wine writing class, I recently journeyed into Eastern Washington to look for these tasty victuals. I chose a logging road off I-90 as a likely spot, as it had been partially burned in the recent wildfires. I managed to find 40 morels in an hour, enough for a fabulous feast. I sauted them with butter, then served them with fresh pasta and cream sauce. Fantastico!
